In fresh produce the correct price falls through the day, and shops that reduce only at closing lose most of what they could have recovered.

Produce bought in the morning has a value that declines by the hour. Everyone knows this and few shops manage it deliberately.
Late reduction recovers least
A reduction at four in the afternoon reaches the customers still shopping. The same reduction at seven reaches almost nobody, and the stock is discarded.
Wastage per line is the buying signal
Consistent waste on a specific line is a quantity error repeated daily. Measured, it corrects within a week; unmeasured, it is accepted as the nature of the trade.
What changes
- Purchase rate recorded per lot so margin is known through the day
- Reductions recorded rather than applied verbally
- Wastage measured per line against what was bought
- Buying quantities adjusted from actual sell-through
