Temperature was fine because nobody said otherwise

A cold chain nobody records is a cold chain nobody can demonstrate, and the first evidence of failure is usually the product.

Chilled product depends on a chain that is continuous. Any gap is invisible while it is happening and obvious afterwards.

Spoilage is a late signal

By the time product has failed, the affected quantity includes everything that shared the excursion, and the extent cannot be established without records.

What this scenario does not cover

It does not set your temperature requirements or your food safety obligations — those come from your own system and your regulator. Recording makes compliance demonstrable; it does not define it.
